Utility of Comprehensive GC×GC Gas Chromatography in Finding Varietal Markers among Volatile Compounds in Non-Aromatic Red Wines

To investigate the utility of comprehensive GC×GC gas chromatography metabolomics in finding varietal markers among volatile compounds non-aromatic red wines, representative samples two most important Croatian monovarietal Plavac mali and Teran, were subjected to analysis by both conventional chromatography–mass spectrometry (GC-MS) two-dimensional with time-of-flight mass (GC×GC-TOF-MS) after headspace solid-phase microextraction (HS-SPME). GC-MS was useful for determination basic profile composed mainly major esters acids, followed terpenes C13-norisoprenoids. GC×GC-TOF-MS allowed identification 209 volatiles, which 49 significantly different across wines. The characteristic Teran theaspirane isomers, ethyl 3-(methylsulfanyl)propanoate, methyhexanoate, ho-trienol, whereas stood out higher concentrations tridecane a 2,3-butanediol isomer. wines successfully differentiated between each other multivariate statistical methods mostly based on data. presented approach that combines advanced showed great potential tracking chemical origin could be practically applied managing wine production, quality typicity, marketing, protection from forgery.
